Module 0 - Course Introduction
In this module, an introduction to the course will be provided. This includes important information regarding the course content & learning objectives, duration, assessment methodology & how to successfully complete the course.
Module 1 - Introduction to ISO 22000:2018
In this module we will explore the purpose, scope, benefits, High Level Structure and key terminology of ISO 22000. We will also explore some of the key concepts namely food safety and organizational risk management, food safety controls, PDCA cycle and the relationship between ISO 22000 and food safety regulations.
Module 2 - Overview of Hazard Control Plan and Pre-Requisite Programs
In this module an overview of the steps required to develop a hazard control plan (HACCP/OPRP plan) will be provided. We will also introduce the different categories of Pre-Requisite programs.
Module 3 - Context of the Organization
In this module we will explore how the organization evaluates the context or environment in which it operates and establishes its FSMS based on its context.
Module 4 - Leadership and Planning
In this module we will explore how Top Management demonstrates Leadership and commitment with respect to the Food Safety Management System (FSMS). We will also review the specific requirements for addressing risks and opportunities, FSMS objectives and planning changes to the FSMS.
Module 5 - Support
In this module we will explore the resources and other supporting structures that are required to establish, implement, maintain and continually improve the FSMS.
Module 6 - Operation, part 1
In this module we will explore the requirements related to pre-requisite programs, traceability, emergency preparedness and response and lastly hazard control.
Module 7 - Operation, part 2
In this module we will explore the requirements related updating the PRP and hazard control plan, control of monitoring and measuring, verification activities and control of product and process non-conformities.
Module 8 - Performance and Improvement
In this module we will explore the internal audit and management review and finally how the organization can continually improve and update its FSMS.
